Because apples come to us in different scales, we have adopted different ways of making cider. Some of our ciders feel like figurines: five-gallon buckets pressed down to one gallon of juice. Others feel like towering Donald Judd sculptures: thousands of gallons in colossal tanks staged in hangars that could house an airplane. We are constantly exploring new blends, varietals, source orchards, co-ferments, piquettes, teas, and fortifications in service of perfecting the next batch.
