Gleaned Red Rome varietals from derelict Grand View orchard in Sebastapol, Ca. Winesap, York Imperial, Empire, Ben Davis, Winter Bananas from the historic fourth-generation Walker Family Farm in Graton, Ca. Apples pressed and macerated two weeks, followed by a second pressing at Old World Winery in Fulton, Ca. Aged in oak barrel for nine months. Dynamic perfume, fruit-forward, apricot, and pear notes, but unmistakably high in acid, tannins, and farmhouse funk.
