Hand-gleaned red Gravensteins picked in Occidental, Ca. Apples were then pressed with Darek Trowbridge at Old World Winery in Fulton, Ca where cider was aged in neutral oak for six weeks. During bottling, cider was dosaged with fresh-pressed juice and bottle conditioned for three months. The final cuvee is a young juicy cider, with fruit on the nose and a dry finish. It has dimensional hints of bret and acid due to the natural climate, both magically and technically fostered by Darek at his beautiful winery.

Harvested mid-August, 2020 and bottled on December 17th, 2019, during the rare 'double planet' conjunction of Saturn and Jupiter to land on winter solstice.

No added yeast or sulfites.
